This exceptional wine is the result from selecting the grapes produced by only 3 hectares of 80 year-old vines. These vines are becoming evermore scarce in Álava due to their low production of grapes, but they continue to offer unbeatable colour and aroma.
The grapes are harvested by hand, selecting every 25 kg to then be placed in small tanks where they ferment via a traditional carbonic maceration method, one of the oldest and most natural methods. Then they are aged for 7 months in new French and American casks, after which they are bottled and stand for at least two months before being ready to sell.
The primary aromas (raspberry, strawberry, liquorice, fruits) of the old Tempranillo vines in Álava, play with the secondary aromas of vanilla, coconut and black pepper, provided by the French and American casks.
On the palate we note their magnificent structure of firm and lively tannins, with their elegant touch of ageing in wood cask.
