This wine is produced using solely Viura grapes, one of the most scarce varieties in the Rioja region. The vines, some of which are over 80 year’s old, are harvested manually in early October, at the precise moment when the grapes have reached their optimal degree of ripeness. The grapes are selected as they are picked off the vines, before being placed into small containers.
After the harvest, the grapes are pressed and fermented in new American casks for 65 days. Then the liquid is clarified using volcanic stone, filtered and left to stand in bottles for 6 months. We only produce 2,000 bottles each year.

Its aroma is very fruity, highlighting nuances of ripe apples with an elegant touch of vanilla which is provided by the new American cask.
