At Bodegas Laukote we consider the production process of our wines to be of vital importance. Each of the steps comprising the process have been carefully designed with the sole purpose of honouring our philosophy, always striving to achieve the highest quality.
One of the first aspects to take into account is the care we provide to the grapes, which must be cared for from the moment they appear on the vine until the time when they are picked. Our old vines are pruned with utmost care and fertilised using natural products to ensure they bear the best possible fruits, which will only be harvested at their optimal point of ripeness, and using only the grapes that are in the best condition.
They are transported in a manner that respects the integrity of the grape, in small containers, to ensure their fermentation does not begin prior to reaching the winery. The first fermentation inside the tank lasts from 7 to 12 days, and once this process has concluded, prior to being pressed, they undergo three treadings while inside the tank, a technique that makes the best possible use of the high quality of our excellent grapes.
